BACON RATATOUILLE

Ingredients: (For 4 People)

  • 4 slices of Bacon
  • 1 medium yellow Onion, chopped
  • 1 cans Chickpeas, drained and rinsed
  • 2 tbsp. Ground Coriander
  • 1 tbsp Dried Parsley
  • ½ cup of Tomato Paste
  • Pound Chopped and Peeled
  • 1 Pound Cherry Tomatoes, Halved.
  • ½ cup Crumbled Feta Cheese
  • Salt and pepper to taste

Start your day with a hearty homemade plate, overflowing with tasty ingredients such as tomatoes, zucchini, chickpeas, and bacon. Top it with a generous amount of crumbled bacon and feta cheese. Or to impress your guests, just place the whole bacon strips on top of the dish.

Instructions:

  1. Cook the bacon in a large sauté pan over medium-high heat, flipping occasionally until crisp. Take it out and put it on a plate lined with a paper towel. Crumble it and reserve 1 for garnish.
  2. Degrease the sauté pan, leaving about 1 in the pan.
  3. Add the onions and sauté them, stirring for 5 min.
  4. Add the chickpeas and Coriander, heat, stirring, 2 - 3 min.

  6. Add the zucchini and stir for 5 minutes or until tender and crisp.
