Beef and Black Bean Tacos

Ingredients:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 can (15 ounces) black beans, drained and rinsed
  • Taco shells or tortillas
  • Toppings: shredded lettuce, diced tomatoes, grated cheese, sour cream, salsa

Instructions:

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent and the garlic is fragrant.
  3. Add the ground beef to the skillet. Cook, breaking it up with a spoon or spatula, until browned and cooked through.
  4. Drain any excess grease from the skillet.
  5. Stir in the chili powder, cumin, paprika, dried oregano, salt, and pepper. Mix well to coat the beef with the spices.
  6. Add the black beans to the skillet and stir to combine. Cook for an additional 2-3 minutes until the beans are heated through.
  7. Warm the taco shells or tortillas according to package instructions.
  8. Spoon the beef and black bean mixture into the taco shells or tortillas.
  9. Top with shredded lettuce, diced tomatoes, grated cheese, sour cream, salsa, or any other toppings you prefer.
  10. Serve the beef and black bean tacos as a delicious and customizable meal.

Tips and Variations:

  • You can add chopped bell peppers or corn kernels to the beef and black bean mixture for extra texture and flavor.
  • Adjust the level of spiciness by adding more or less chili powder or adding a pinch of cayenne pepper.
  • For a vegetarian version, replace the ground beef with plant-based ground meat substitute or extra black beans.
