Beef and Vegetable Skewers with Chimichurri Sauce

Ingredients:

  • 1 pound beef sirloin, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 8-10 cherry tomatoes
  • Wooden or metal skewers
  • Salt and pepper, to taste

For the Chimichurri Sauce:

  • 1 cup fresh parsley leaves, chopped
  • 1/4 cup fresh cilantro leaves, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 1/2 cup olive oil
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Soak wooden skewers in water for about 30 minutes to prevent burning.
  2. Preheat the grill or grill pan over medium-high heat.
  3. Thread the beef cubes, bell pepper, red onion, and cherry tomatoes onto the skewers, alternating the ingredients.
  4. Season the skewers with salt and pepper.
  5. In a small bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, dried oregano, salt, and pepper. Stir well to make the chimichurri sauce.
  6. Grill the beef skewers for approximately 4-5 minutes per side or until the beef reaches your desired level of doneness.
  7. Remove the skewers from the grill and let them rest for a few minutes.
  8. Serve the beef and vegetable skewers with the chimichurri sauce drizzled over the top.
  9. Enjoy as is or serve with a side of rice or salad.

Tips and Variations:

  • You can add other vegetables like zucchini, mushrooms, or eggplant to the skewers.
  • For added flavor, marinate the beef cubes in a mixture of olive oil, minced garlic, soy sauce, and your choice of herbs and spices for 30 minutes before skewering.
  • If you don't have a grill or grill pan, you can also cook the skewers in the oven under the broiler for 8-10 minutes, turning once.
