Instructions:
- Soak wooden skewers in water for about 30 minutes to prevent burning.
- Preheat the grill or grill pan over medium-high heat.
- Thread the beef cubes, bell pepper, red onion, and cherry tomatoes onto the skewers, alternating the ingredients.
- Season the skewers with salt and pepper.
- In a small bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, dried oregano, salt, and pepper. Stir well to make the chimichurri sauce.
- Grill the beef skewers for approximately 4-5 minutes per side or until the beef reaches your desired level of doneness.
- Remove the skewers from the grill and let them rest for a few minutes.
- Serve the beef and vegetable skewers with the chimichurri sauce drizzled over the top.
- Enjoy as is or serve with a side of rice or salad.
Tips and Variations:
- You can add other vegetables like zucchini, mushrooms, or eggplant to the skewers.
- For added flavor, marinate the beef cubes in a mixture of olive oil, minced garlic, soy sauce, and your choice of herbs and spices for 30 minutes before skewering.
- If you don't have a grill or grill pan, you can also cook the skewers in the oven under the broiler for 8-10 minutes, turning once.
