Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil

  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Preheat a grill or grill pan over medium-high heat.
  2. Season the chicken breasts with the Cajun seasoning, ensuring they are evenly coated on both sides.

  4. Place the chicken breasts on the preheated grill and cook for about 6-8 minutes per side or until cooked through and grill marks appear.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
  6. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, sliced cucumber, sliced red onion, crumbled feta cheese, and chopped fresh parsley.
  7. Add the sliced grilled chicken to the salad bowl and toss everything together to combine.
  8. Serve the Cajun grilled chicken salad with lemon wedges on the side for an extra burst of citrus flavor, if desired.
