Cilantro Lime Grilled Chicken

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 2 teaspoons dried cilantro
  • Salt and pepper to taste
  • Lime wedges (for serving)
  • Fresh cilantro leaves (for garnish, optional)

Instructions:

  1. In a bowl, whisk together lime juice, olive oil, dried cilantro, salt, and pepper to make the marinade.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  6. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  7. Serve the Cilantro Lime Grilled Chicken with lime wedges and garnish with fresh cilantro leaves if desired.

Tips:

  • You can use boneless chicken thighs instead of chicken breasts for a juicier option.
  • Serve the grilled chicken over a bed of rice or in tortillas for tacos.
