Grilled Chicken Kebabs

Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 8-10 wooden or metal skewers
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. If using wooden skewers, soak them in water for about 20 minutes to prevent burning.
  2. In a bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, dried oregano, salt, and pepper to make a marinade.
  3. Place the chicken cubes in a resealable plastic bag or a bowl and pour the marinade over them. Toss to coat the chicken evenly. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating the ingredients.
  6. Brush the grill grates with oil to prevent sticking.
  7. Place the skewers on the preheated grill and cook for about 6-8 minutes per side, or until the chicken is cooked through and the vegetables are slightly charred.
  8. Remove the skewers from the grill and let them rest for a few minutes before serving.
  9. Serve the Grilled Chicken Kebabs as is or with a side of rice, salad, or grilled vegetables.

Tips:

  • You can customize the marinade by adding your favorite herbs and spices, such as cumin, chili powder, or dried thyme.
  • If you're using wooden skewers, make sure to soak them long enough to prevent them from burning on the grill.
  • Feel free to add other vegetables like cherry tomatoes or zucchini to the skewers for additional flavor and color.
