Lemon Garlic Grilled Chicken Skewers

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into cubes
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

  1. In a bowl, whisk together the lemon juice, olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
  2. Add the chicken cubes to the marinade and toss to coat them evenly. Let the chicken marinate for at least 10 minutes or up to 1 hour in the refrigerator.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated chicken cubes onto the soaked wooden skewers, distributing them evenly.
  5. Place the chicken skewers on the preheated grill and cook for about 4-5 minutes per side or until the chicken is cooked through and slightly charred.
  6. Remove the skewers from the grill and let them rest for a couple of minutes before serving.
  7. Serve the lemon garlic grilled chicken skewers with a side of rice, a fresh salad, or in a wrap for a delicious and quick meal.
