One-Pot Cheesy Pasta with Sausage

Ingredients:

  • 8 ounces pasta (penne, rigatoni, or any other short pasta shape)
  • 1 lb sausage (choose your favorite variety, such as Italian sausage or chicken sausage)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot or skillet, cook the sausage over medium heat until browned and cooked through. Remove from the pot and set aside.
  2. In the same pot, add the diced onion and minced garlic. Cook for 2-3 minutes until the onion becomes translucent.
  3. Add the diced tomatoes (including the juice) and chicken or vegetable broth to the pot. Bring to a simmer.
  4. Break the sausage into smaller pieces and return it to the pot.
  5. Add the pasta to the pot and stir to combine. Make sure the liquid covers the pasta.
  6. Cover the pot and cook on low heat for about 15 minutes or until the pasta is tender, stirring occasionally.
  7. Remove the lid and stir in the shredded cheese until melted and creamy. Season with salt and pepper to taste.
  8. Remove from heat and let it rest for a few minutes.
  9. Serve the cheesy pasta with sausage hot, garnished with fresh chopped parsley.
