Instructions:
- In a large pot or skillet, cook the sausage over medium heat until browned and cooked through. Remove from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Cook for 2-3 minutes until the onion becomes translucent.
- Add the diced tomatoes (including the juice) and chicken or vegetable broth to the pot. Bring to a simmer.
- Break the sausage into smaller pieces and return it to the pot.
- Add the pasta to the pot and stir to combine. Make sure the liquid covers the pasta.
- Cover the pot and cook on low heat for about 15 minutes or until the pasta is tender, stirring occasionally.
- Remove the lid and stir in the shredded cheese until melted and creamy. Season with salt and pepper to taste.
- Remove from heat and let it rest for a few minutes.
- Serve the cheesy pasta with sausage hot, garnished with fresh chopped parsley.
