Peanut Butter Bites (Sugar-Free)

Ingredients:

  • 1 cup natural peanut butter (unsweetened)
  • 1/4 cup coconut flour
  • 2 tablespoons unsweetened almond milk (or any plant-based milk)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: sugar-free chocolate chips or chopped nuts for coating

Instructions:

  1. In a mixing bowl, combine the natural peanut butter, coconut flour, unsweetened almond milk, vanilla extract, and salt. Stir well until all the ingredients are thoroughly combined.
  2. The mixture should be thick and slightly sticky. If it's too dry, add a little more almond milk, one teaspoon at a time. If it's too wet, add a bit more coconut flour, one teaspoon at a time.
  3. Using your hands, roll the mixture into small bite-sized balls. If desired, press a sugar-free chocolate chip or chopped nut onto the top of each ball for added flavor and texture.
  4. Place the peanut butter bites on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to firm up.
  5. Once chilled, the sugar-free peanut butter bites are ready to enjoy. Store them in an airtight container in the refrigerator for up to one week.
