Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the unsweetened peanut butter, sugar-free sweetener, egg, vanilla extract, baking soda, and salt. Stir well until all the ingredients are thoroughly combined.
  3. Scoop out tablespoon-sized portions of dough and roll them into balls. Place the cookie dough balls onto the prepared baking sheet, leaving space between each cookie.
