PUMPKIN SOUP WITH BAY LEAVES (VEGETARIAN)

Ingredients: (For 4 People)

  • ½ Pumpkin (can be purchased pre-cut)
  • 1 Onion
  • 3 Tbsp. Butter
  • 2 Potatoes
  • 1 liter (4 cups) chicken stock
  • 2 Tbsp.  Dried Thyme
  • 2 Tbsp. Ground Bay Leaves
  • ½ cup Half & Half
  • Salt and pepper to taste
  • Fresh Parsley for presentation

Instructions:

  1. Carefully wash the whole pumpkin, and dry Cut the top out of the pumpkin, then carefully remove the seeds. Peel the pumpkin and carefully chop the flesh into cubes.
