TOMATO & ARUGULA SALAD (VEGETARIAN – GLUTEN FREE)

Ingredients: (For 4 People)

Salad dressing:

  • Balsamic Vinegar
  • 4 tbsp. Olive Oil
  • 1 tbsp. Dijon Mustard

Salad ingredients:

  • 1 Bag of Arugula Salad
  • 8 Cherry Tomatoes, halved
  • 1/3 cup Pine nuts
  • 2 Shallots, Finely Minced
  • 2 tbsp. Dried chives
  • 1 tbsp. Dried Cilantro
  • 1/3 cup Crumbled Feta Cheese
  • Salt and pepper to taste

Instructions:

  1. For the vinaigrette, add balsamic vinegar to mustard in a bowl and slowly pour olive oil while mixing with a fork until it becomes a creamy dressing, add pepper and salt.
  2. Mix Arugula with Cilantro, Chives, feta, and shallots in a salad Add vinaigrette and toss before serving. Sprinkle with pine nuts at the end.
