Salad dressing:
- Balsamic Vinegar
- 4 tbsp. Olive Oil
- 1 tbsp. Dijon Mustard
Salad ingredients:
- 1 Bag of Arugula Salad
- 8 Cherry Tomatoes, halved
- 1/3 cup Pine nuts
- 2 Shallots, Finely Minced
- 2 tbsp. Dried chives
- 1 tbsp. Dried Cilantro
- 1/3 cup Crumbled Feta Cheese
- Salt and pepper to taste

Instructions:
- For the vinaigrette, add balsamic vinegar to mustard in a bowl and slowly pour olive oil while mixing with a fork until it becomes a creamy dressing, add pepper and salt.
- Mix Arugula with Cilantro, Chives, feta, and shallots in a salad Add vinaigrette and toss before serving. Sprinkle with pine nuts at the end.
